Ingredients 🍅
Gnocchi
Spinach 150g
Flour 150g
Sauce (optional but so good)
Spinach 50g
Olive oil
Walnuts
Garlic
Steps 🪜
Blend spinach & add the flour
Cut the dough directly in salted water (you can use a freezer bag as a pastry bag)
Cook until the gnocchi come up
Blend the sauce ingredients and serve on hot gnocchi
Ok, this is not the richest in protein but so good, and so easy! What I like to do is combine this entree with a hummus starter. I will share some hummus recipes along the way…

I’ve tried with broccoli and chards as well. It’s also good, but what is convenient in the spinach is that you don’t need to cook it beforehand. It’s already full of water and easy to combine with the flour. Also, it has more taste than a broccoli in my opinion.
