Ingredients 🍅
Tortillas
1 cup red lentils
2 cups water
Filling
Broccoli
Red onion
Garlic
Half coconut milk can
Soya Sauce (optional)
Sesame Oil (or other oil)
Steps 🪜
3 hours before eating, just leave the red lentils + a pinch of salt in the water.
3 hours later, blend the lentils (I use a hand blender).
Cook your veggies in the oil and add the coconut milk.
Cook the lentils tortillas in a pan until it’s golden brown.
Wrap the veggies in the tortillas, and it’s ready to eat!
Variants 🤷♀️
For the filling, you can actually take whatever veggie is left from the day before in your fridge, and just heat it with the coconut milk. So it can be broccoli, butternut, leaks, zucchini, whatever! That’s what I did 🤭.
Also, you can totally eat those tortillas sweet as well, with peanut butter, marmelade, or any other spread. They’re amazing because also gluten-free!
